This weekend seems to have flown by and its not 9.15pm on Sunday evening and soon enough I'll be heading off to bed to prepare to go back into work tomorrow. I am hoping that I wake up tomorrow feeling magically better.
Today has again been a pretty lazy day I didn't do a great deal this morning except bake some low syn brownies (more to come on them) and watch countless episodes of 24....I think I will need to hook the PS3 up to my TV soon so I don't have to wait for Rich to be off the xbox...or just nab his laptop.
Other than being quite lazy I did get to enjoy a very tense North London derby and see the lovely Arsenal win against their biggest rivals. I did manage to scare the crap out of Doug when the goal went in...I guess he was too busy sleeping to expect me to scream the house down. The transfer window shuts tomorrow so hopefully some new players will be coming in. Needless to say I will be keeping one eye on the sports news most of the day.
Apart from the football and 24 I really haven't been that interesting today. I still don't feel well enough to do anything too interesting but it does mean I get to gossip with friends and relax.
I had a good food day today with lots of yummy superfree bunged in as I really want a decent loss again this week.
Food Diary
Breakfast
I love having the aldi sub rolls for breakfast they make a really good sandwich. Inside this beauty were mushrooms (SF) low fat quorn sausages (F) and three slices of low low (HEA) all wrapped up in 90g of delicious bread (HEB + 3 syns).
Lunch
I really enjoyed lunch today inside the mushrooms (SF) are a mix of courgette and onions (SF) and then I topped them with 75g of garlic and herb philli and baked in the oven. I had a mini salad with it too just incase I didn't have enough superfree ;) I followed this up with melon and mango just to have a bit more.Dinner
Epic roast! The veggies are Brussels sprouts, green beans, broccoli, cauliflower and carrots (SF). I also had one yorkshire pudding (2 syns) gravy (1.5 syns) stuffing balls made from Linda McCartney rosemary and red onion sausages (F) and quorn roast and roast potatoes. I took a pre gravy picture so you can relish in the gloriousness of the roast.
Pudding
I made the brownies earlier on in the day and the entire batch was 12.5 syns so 1.5 each. They are pretty simple to make (Thanks to Lynne for sharing the recipe)
6 large eggs - separated.
Whisk whites to stiff peaks
Add 40g options & 20g cocoa to egg yolks and 1tsp vanilla essence.
Mix yolks, sweetener (20 tsps), essence and cocoa adding a little egg white to loosen.
Gently fold in the remaining egg whites.
Pour into a frylighted oven dish and bake on 180°C for 20 mins

They smelt great and were tasty for pudding. The bananas and strawberries worked well too.

The usual coffee (HEA) and water.

My weekend started at noon today and I'm back at work at 8am :( A rare offer of overtime and a shortage of pennies meant I worked 2 extra days. Roll on next weekend! x
