When I woke up and saw to Doug I wasn't really sure what I wanted for breakfast so instead I decided to decorate my laptop...
As you can see this picture comes complete with a Doug pose. The pretty purple decorations are left over decals from our front window. Whilst my laptop is lovely I wouldn't normally go for white so this makes it pretty....this is what happens when Karen is not given coffee early enough.
So after this decorating interlude I finally decided I wanted an omelette with some linda mccartney rosemary and red onion sausages. Originally the sausages were going to be chopped up in the omelette but my brain was not functioning this morning so they ended up separate from the omelette.
Yet again a pretty successful omelette I think I have mastered the knack of making a good omelette. I chuck all the veggie bits in (peppers, onions, mushrooms and courgettes today) and fry them off then chuck the egg on top (which I added garlic and herbs too). I then put it under the grill to cook the top then chuck on the cheese and its done. It was really tasty and went down well with my coffee.
After that I had planned a morning of Eastenders catch-up and walking Doug. When I finished that I went on a baking mission. A friend of mine has made some low syn brownies which I had tried before but didn't work so well as used the wrong type of sweetener so wanted to try them again.
They turned out okay and quite tasty though not the real thing of course.
Recipe wise it is pretty simple to make and is as follows
175gm of self raising flour (28syns)
1 tsp baking powder (1/2syn)
1 tbsp co-co powder (1syn)
1/2 tsp cinamon
1/2tsp all spice
1/2tsp nutmeg
cup of sweetner
1/2 a butter nut squash cooked in sweet water and pureed
3 eggs
1 cap of toffee essence/chocolate essence
You can add chocolate chips but will need to syn them
Mix all the dry ingredients together
Mix all the wet ingredients together
Then mix together well and pour into a lined tray
Bake at 180 for 15-20 mins till a knife comes clean,
30 syns for the lot so mine worked out about 1.3 syns per brownie. On top I sprinkled some chocolate and vanilla sprinkles (1 syn worth)
Once I finished being a domestic goddess or something like that....it was time for lunch and I wanted cheese and bread and soup so thats what I had. Yet again I have to say I love green! Two A's and B's.
Another portion of cauliflower cheese soup with a weight watchers petit pain covered in cheese. Afterwards I had fruit and yoghurt which was yummy as normal.
The afternoon was filled with present wrapping which was good fun for the first hour...not so much when I was hitting the two hour mark though. I watched my favourite film Nightmare before christmas whilst I was doing the wrapping and that made me feel christmassy.
After I finished this I was pretty tired and really wanted to have a takeaway but I am trying to be good this week so I can get my 3 stone award so I continued with my original plan of chicken satay which was surprisingly easy to make and quite tasty.
I made up about 300 ml of stock and tsp of soy sauce and a 1 tbsp of peanut butter light. I added to the quorn chicken broccoli and mushrooms. I also added some onions. You just cook it until it goes nice and thick and it was very tasty. I was impressed as was Rich who is not a fan of nuts.
Afterwards I had some of my brownies with custard little bit syn heavy but so good tonight and I will compensate tomorrow by not going over 10.
We just had a bit of an issue in the Pursey-Cadman house as our main tv (not Rich's gaming one) threw a fit. First it turned off then it decided to not have volume. I am currently watching The secret of crickley hall so maybe the tv got a bit scared! Thankfully the marvelous Rich fixed it for me first by changing the fuse then wiggling the scart lead. We do have a tiny tv in the bedroom but watching Arsenal win a game on that would be a pain. Yes Arsenal won today I dont know much other than it involved dodgy penalties but I don't mind. It's a victory which is sorely needed right now with some tricky games coming up.
I need to fit in a major reading session tomorrow as the pile of books is well piling up....
Today was a higher than normal syn day for me but I do feel nice and satisfied so I dont mind. I aim to have 70 syns per week and don't like to count them down but I will try it this week and see how it goes. I still have 9 a day anyway and tomorows meal plans are looking syn free. I may make a different soup tomorrow too I am thinking sweet potato and butternut squash or parsnip and apple. I can't decide and no doubt I will change my mind tomorrow.
